Today I want to share with you a salad that I made for our Easter dinner that we had on Sunday. We had to get together a week early because my youngest daughter was in town for a volleyball game and would not be coming back for Easter.
This is a recipe that I got from my sister-in-law clear back in the late 1970's and has become a salad that is always on the table for every family get together. So sorry I don't have a picture to share with you, didn't have time to take one. You can stir this up a couple of days before you need it too.
CHERRY COKE SALAD
1 - 14.5 oz. can of red sour cherries, save the liquid
1 cup sugar
1/2 cup liquid from the cherries
1 - 8 oz. can crushed pineapple, undrained
10 ounces COKE
1 cup chopped nuts, optional
2 - small packages cherry Jell-O
Place cherries, sugar and cherry liquid in saucepan. Bring to a boil and boil for 2 to 3 minutes, remove from the heat. Pour in cherry jello and stir well. Slowly add the COKE, mixing well. Set aside to cool to lukewarm. Add the nuts and pineapple when mixture is lukewarm. Pour into either a serving bowl or a mold. Put into refrigerator to set.

Strawberry Pretzel Salad

We had this salad recently at a funeral luncheon, my daughter has been begging me to make it since August, so I finally put it on the menu of things to make. I found the recipe at Allrecipes.com. It has been years since I've had it and it is still just as good as I remember it. Now some people serve this as a sweet salad and some as a dessert. Either way, it's just plain GOOD!
Strawberry Pretzel Salad
2 cups crushed pretzels
3/4 cup butter, melted (this equal to 12 Tablespoons)
3 Tablespoons white sugar
1 - 8 oz. package cream cheese, softened
1 cup white sugar
1 - 8 oz. carton Cool Whip, thawed
2 - 3 oz. packages strawberry Jell-O
2 cups boiling water
2 - 10 oz. cartons frozen strawberries ( I use the sweetened ones), don't thaw
Preheat oven to 400 degrees. Stir together crushed pretzels, melted butter and 3 Tablespoons sugar; mix well and press mixture into the bottom of a 9" x 13" baking dish. Bake 8 to 10 minutes, until set. Set aside to cool. In a large mixing bowl cream together the cream cheese and 1 cup sugar. Fold in the Cool Whip; combine well. Spread mixture onto cooled crust. In another mixing bowl, dissolve Jell-O in the boiling water. Stir until Jell-O has dissolved, than add the still frozen strawberries and allow to set briefly. When mixture is about the consistency of egg whites, pour and spread over the cream cheese layer. Refrigerate until set.
Serves 12
Now the next time I make this, I'm going to halve the recipe, as this makes too much for just two people to eat.
Try it and see for yourself how delicious this is and than you can decide, is it a salad or a dessert.

Cool Whip Fruit Salad
I'm going to share with you a recipe that I came up with on my own. I found a salad recipe on allrecipes.com called Orange Cream Fruit Salad, but didn't like the fact that I only needed 2 tablespoons of frozen orange juice concentrate and the only size of the juice I could find was huge (I didn't want to waste it)! So I came up with this salad and everytime I make it, it is gone within three days, that is with only three of us eating it, if you take to a gathering, it will probably be gone. We really like it and I hope you do to!
Cool Whip Fruit Salad
1- 3.5 ounce package INSTANT vanilla pudding mix
1 1/2 cups milk
1- 20 ounce can pineapple tidbits, drained
1- 15 ounce can fruit cocktail, drained (I like the very cherry flavored kind)
1- 15 to 20 ounce can mandarin orange segments, drained
1/2 tub (8 ounce size) Cool Whip, thawed*
1/2 bag (10.5 ounce size) mini-marshmallows, you can add more
2- 10 ounce jars maraschino cherries, drained, no stems
In a medium mixing bowl, combine pudding mix and milk. Add Cool Whip and fold in. Than add the drained fruit and marshmallows, mixing well. Cover and refrigerate for two hours before serving.
*Thaw your Cool Whip in the refrigerator, that way if you don't need all of it, you can re-freeze it, according to what I read on the container.
You could add slice bananas and apples, but know that after a day they will turn brown in the salad.

Broccoli Slaw Recipe

Hi everyone, hope you had a good day, the sun was out here but still alittle chill in the air. Today I'm going to post a recipe that my family really likes especially my mother-in-law. Hope you will enjoy it too. It goes well with just about anything, would be good with your Easter dinner.
Broccoli Slaw
Slaw:
1 bag (16 oz.) broccoli slaw (sometimes called broccoli coleslaw)
4 green onions, chopped tops included
1/2 cup slivered almonds or sliced
4 Tablespoons sunflower seeds
1 pkg. chicken flavored ramen noodles, crushed
Dressing:
the flavor packet from the ramen noodles
1/4 teaspoon pepper
1/4 teaspoon salt
1/4 cup vegetable oil
4 Tablespoons sugar
4 Tablespoons cider vinegar
Directions:
Prepare the dressing at least 3 hours in advance. After the dressing has sat, pour over all the remaining ingredients EXCEPT the ramen noodles. Toss to coat well. Right before serving, add the CRUSHED ramen noodles. Refrigerate any leftovers.
Serves 4 to 6 people.
Enjoy!!
